Been looking for a great coconut cookie recipe and found this one at allrecipes.com.
So good that the first batch I made was gone the first day now I double the recipe to have enough to put some in the freezer for a rainy day.

Coconut Icebox Cookies

1/2 cup butter

1 cup white sugar

1 egg

2 tsp. vanilla extract(I use the double strength from Penzeys and only need 1 tsp.)

1/2 tsp coconut extract

1 3/4 cup all-purpose flour

3/4 tsp salt

1/2 tsp baking soda

1 cup shredded coconut

Directions:

Cream butter until smooth; add sugar & continue creaming until light & fluffy. Stir in egg, vanilla & coconut flavorings.

Sift flour with salt & baking soda. Alternately add flour & coconut to creamed mixture. Form the dough into logs about 2 inches in diameter. Wrap and chill for atleast two hours or overnight.

Preheat oven to 375 degreesF. Cut dough into 1/4 inch slices. Bake on an ungreased cookie sheet until golden, about 10 minutes. Make 2 dozen cookies
